Mango Coconut Bake





This a simple fix to a serious sweet tooth craving.


Ingredients:



  • 1 or 2 mangos (peel and slice)
  • 1 C. coconut chips 
  • 3 C. oatmeal
  • 1 1/2 C. Butter
  • 1 C milk
  • 1 C. packed brown Sugar
  • 2 eggs.
  • 1 tsp vanilla
  • *optional...whip cream for topping. 

Start by melting butter, vanilla and brown sugar in a saucepan. 



Add mango and half the coconut. Stir till bubbly.



 In a separate bowl, mix milk and eggs WELL! 

                      

Slowly add milk mixture to boiling mango sauce pan. Stir till a little bit thicker. Remove from heat. Set aside. 

In a large bowl, add oatmeal. Slowly blend in the liquid mixture. 



Butter the bottom of a glass casserole dish. Add mixture and press down. 


Top with remaining coconut. Bake 410 for 15 minutes. Spoon into dishes HOT! Top with whipped cream.
