Toasted Vegan Sweet Stuffed Peppers



 
Whether you're looking for a main dish, side dish or appetizer...these tasty bites are not only healthy but also filling.

Ingredients: 


  • Extra Virgin Olive Oil
  • Assorted Colorful Sweet Peppers
  • Extra Firm Tofu
  • Italian Seasoning (Thyme, Oregano, Basil, Rosemary, Sage and Marjoram)
  • Crushed Fresh Garlic

Instructions:

  • Set oven to 350. 

Start by gently coating the base of a glass baking dish with extra virgin olive oil.  


Prep your peppers and tofu. Slice tofu into small stick-shaped slices. Basically, you want to be able to slide each piece into the sweet peppers. Then cut off the tops of the peppers. Make sure to gently scrape out the inside to have room for the tofu sticks. 


Then go ahead and stuff your peppers.


Line them up in your glass baking dish. 


Sprinkle with seasonings. Don't forget the garlic! 


Cover with foil. Bake 10 minutes. Remove foil bake an ADDITIONAL 10 minutes!

And voila! Toasted Vegan Sweet Stuffed Peppers.
